While Oscar's Taco Shops are a family affair that spans Tennessee and Arizona, the first-of-its-kind Rosie's Taco Shop represents Oscar's wife Rosie's influence, through a diverse menu starring her favorite recipes. Her all-new bowls are filled with crisp romaine lettuce, black beans, rice, tomato, guacamole, sour cream, shredded cheese, with a protein of your choice. Other new dishes on deck include a Cali Burrito, Quesa Birria Taco and an Elote Cocktail on the side with grilled corn, aioli aged cotija cheese, lime and chili powder.  Rosie brings her penchant for dessert, with churros, rice pudding, and cheesecake chimis. Mainstays on the menu still include their popular breakfast burritos, tacos, quesadillas, chips and dips, nachos, fries, kids’ meals and more.

Our Story

As a young boy, Oscar Ruiz knew he wanted to follow in his father’s footsteps.  Javier Ruiz mentored his young son Oscar in the family’s thriving taco shop business in California. Fast forward to May 2022, and Oscar’s proud father will be giving his son and daughter-in-law Rosie an assist behind the scenes, while launching their first “Rosie’s Taco Shop” on Main Street.

This first-of-its-kind concept represents Rosie’s influence, through a diverse menu starring her favorite recipes. While Oscar’s Taco Shops are a family affair that span the states of Tennessee and Arizona, this brand-new concept on Main Street is near and dear to their hearts, as Rosie and Oscar are raising their three sons: Fabian, Damian and Ivan in Verrado. In fact, the Ruiz family resides within walking distance of their family-friendly Main Street shop. Their fans, friends and neighbors are eager to try the fresh selections on the Rosie-inspired menu.

Oscar explains: “We’re not a national chain. We consider ourselves a mom-and-pop operation with a history that traces back to my father’s first taco shop in 1982. That means we start from scratch with fresh ingredients every day. On Main Street, our staff will start prepping by 5:30 a.m. to be ready to open our doors at 7 a.m. for breakfast seven days a week.”

“Even more, nothing goes on the grill until you place your order,” Rosie added. “We don’t let food sit in warmers. Most importantly, we are committed to affordable food and good portion sizes, as we welcome our friends and neighbors to visit us several times a week.”

While Rosie’s first location on Main Street offers comfortable indoor seating and take-out, once the kitchen has been running for a few weeks, online ordering will launch for pickup. ‘
